FRESH RHUBARB
1 pound unpeeled rhubarb (4 cups)
1 cup mild flavored honey
1/4 teaspoon salt
Wash and cut rhubarb into inch pieces without peeling. Stir together well with honey and salt.
TO COOK ON THE STOVETOP:
Cook covered over low heat about 5 minutes. Remove cover. Stir and cook only until sauce is consistency that pleases you,
TO COOK IN THE OVEN:
If you are using your oven for dinner, do leave room for a dish of rhubarb. Follow above directions for preparation, Place in buttered baking dish with cover. Heat oven to 350 degrees F (moderate). Bake 30 minutes. Remove cover and continue baking until sauce is desired consistency.
HINT:
Most people like rhubarb sauce with texture. The shorter the cooking time the better the texture.
