Recipe(tried): Raspberry-Cheese Coffee Cake
Breakfast and BrunchHere is a really easy coffee cake recipe that tastes great!! Raspberry-Cheese Coffee Cake
1-8 oz. package cream cheese, softened
1/2 cup butter,softened
1 3/4 cups all-purpose flour
1 cup sugar
2 eggs
1/4 cup milk
1 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. vanilla
1/2 cup seedless Raspberry Jam OR Strawberry preserves
Grease a 9"x13" baking pan; set aside.
In a large mixing bowl, beat the cream cheese and butter with an electric
mixer on medium speed until combined. Add about half of the flour , mixing well.
Add the sugar,eggs,milk,baking powder,baking soda and vanilla to cream cheese
mixture.Beat on low speed until thoroughly combined, scraping sides of
bowl.Beat on medium speed for 2 minutes. Beat in remaining flour, beat just
until combined.
Spread batter evenly into prepared pan. Spoon Jam in small mounds on top
of batter. Using a knife or spatula, swirl batter and jam together.Do not
swirl too much or the effect will be lost.
Bake cake in a preheated 350 F. oven for 30-35 minutes or until a toothpick
inserted in the middle of cake comes out clean.
Cool cake in the pan for 15 minutes.Sift powdered sugar on top of cooled
cake, serve warm or cold.
