Recipe: Re: Recipe: Beef Quesadilla Pie
Misc.My sister-in-law made this pie with a variation:
She called it Mexican Lasagna.
Use flour tortillas instead of pie crust, and add a can of tomato sauce to salsa.
Layer tortillas in 9x13 pan.
Brown the ground meat with a chopped large onion and clove of garlic (adding a chopped bell pepper doesn't hurt either).
Add layer of meat; layer of sauce, layer of cheese.
Repeat, ending with the cheese.
Bake at 350 for about 20 minutes.
How deep this gets depends on how much filling you make. Some people use the 2 lb. pkgs of ground meat.
Some use 1 lb. meat, and add beans or additional grated veggies to the sauce. I add taco seasoning to the meat and sauce; and I find it's a good time to use up some leftovers from the refrigerator.
Note: If your family is hesitant to eat kidney beans or black beans, etc., whirr them in the blender and add them to the sauce. Some school cafeterias do this to chili because the kids won't eat recognizable beans.
