Recipe(tried): Boy Scout Turkey

Karen, We have been cooking our turkeys underground in New Orleans for the pass 10 or so years. We start off with a shallow dug hole (turkey is bigger than the pot) so that the turkey fits underneath. Line the bottom of the hole with foil and using a turkey stand, place it at bottom of hole. Place the pot over the top and at a nearby location start on the coals. Once the coals have whitened place at the base of the pot. You could even try to place them up the side as much as you can. At this time the turkey should be under the pot. Cooking time are close to the same as times for an oven, and by the pound. This is what we call a BOY SCOUT TURKEY

Parts needed
turkey
large pot (no lid)
2 bags of coals
foil
matches
cooking stand (keeps turkey from being on the ground)
2 1/2 hours to 3 of time

OOOOh and one mor thing. You can'not check the turkey while cooking.
