BRUSSELS SPROUTS WITH BACON AND APPLE
3 slices applewood smoked bacon, cut in 1/2-inch pieces
2 1/2 pounds fresh brussels sprouts, trimmed, halved
2 tablespoons olive oil
Salt and pepper to taste
1 Granny Smith apple, cored, cut into 1/4-inch slices, slices halved crosswise
2 teaspoons red-wine vinegar
Heat oven to 425 degrees F.
Arrange bacon on large rimmed baking sheet; transfer to oven. Cook until browned, 9 minutes. Drain bacon on paper towels, leaving grease in pan.
Toss brussels sprouts with oil. Put on baking sheet in single layer. Season with salt and pepper. Cook, stirring occasionally, until they begin to brown, 12-15 minutes.
Remove pan from oven. Add apples. Return to oven; cook until sprouts are tender and apple has softened, 10-15 minutes.
Remove from oven. Sprinkle with vinegar. Transfer to bowl. Top with bacon.
Makes 8 servings
