Misc.Here are a couple -
BANANA BREAD
(Wheat Free)
1 1/2 c. rice flour
1 tsp. cornstarch
1 c. sugar
1 tsp. baking powder
1/2 tsp. baking soda
1 tsp. salt
3 Tbsp. oil
3/4 c. buttermilk
2 eggs
2 bananas, mashed
1 c. nuts (optional)
Combine all ingredients in mixing bowl. Beat at medium speed 1/2 minute. Pour into greased 9 x 5-inch loaf pan. Bake at 350 degrees for 55 to 65 minutes or until wooden pick comes out clean. Cool 5 minutes in pan before removing to cooling rack.
Rice Tortillas
Ingredients:2 cups rice flour
1 egg white
water as needed
1 tsp. coarse salt
Procedure:Mix the flour and egg white with a fork and incorporate enough water to make a soft dough. Roll out on rice-floured surface and roll thin as possible with rolling pin. (pasta machine won't work here) Cut into small rounds with cookie cutter. As dough dries out, scrape back into the bowl and wet down with sprinkles of water until it holds together again. Continue until all dough is cut out. It's a good idea to layer the already cut discs between sheets of waxed paper while working.
Fry the discs in canola oil or olive oil and top either with cinnamon sugar, jam, mozarella cheese and sauteed onions, whatever you're in the mood for. These are chewy-crisp and very satisfying when you need a "carrier" for your allowed goodies. Makes 1 dozen more or less depending on size of your cutter.
ZUCCHINI MUFFINS
(Wheat Free)
1 1/2 c. rice flour
1 tsp. cinnamon
1 c. sugar
1 tsp. baking powder
1/2 tsp. baking soda
1/2 c. oil
2 eggs
1 c. zucchini, shredded
1 c. nuts (optional)
1/2 tsp. vanilla
Combine all ingredients in mixing bowl. Beat at medium
speed scraping bowl, until all blended. Pour into greased
muffin tin or cupcake liners. Bake at 350 degrees for 35 minutes or
until pick comes out clean. Check at 25 minutes. Makes 1 to
1 1/2 dozen.
