Recipe: Sunkist Lemon and Pistachio Rice (using instant rice)

SUNKIST LEMON AND PISTACHIO RICE

3 Tbsp. Sunkist freshly squeezed lemon juice
2 cups water
1/4 tsp. cinnamon
1/4 tsp. salt
1/4 cup Sunkist pistachios
1/2 cup golden raisins
2 cups instant rice
1 1/2 tsp. finely grated fresh Sunkist lemon peel

Combine Sunkist fresh-squeezed lemon juice, water, cinnamon, salt, pistachios and raisins and bring to a boil in a medium saucepan.

Stir in rice, cover pan, and remove from heat. Let sit for 5 minutes or until liquid is absorbed.

Fluff rice with fork and just before serving, stir in finely grated lemon peel.

NOTES:
1 medium Sunkist lemon = 3 tablespoons juice and 2 to 3 teaspoons finely grated peel

For added flavor, chicken broth may be used in place of water.
