x 5I don't know how do you keep this "hot" all the time but you may want to bring the ingredients to her place and make it over there? I added one hot chocolate mix that you coudl bring along as a gift at the end of this post just in case you can't bring hot drink with you... Hope one of these helps. It's always good to see an old friend! Have fun!

Title: HOT WHITE CHOCOLATE
2 Servings

1/4 lb White chocolate
1/4 c Brandy or rum
1/4 ts Vanilla extract
2 Egg yolks
1 pt Milk

PLACE CHOCOLATE, BRANDY and vanilla in the top of a double boiler
filled with boiling water, place over medium heat and cook until
chocolate is melted. Remove from heat, but leave melted chocolate in
the double boiler. Add the yolks and mix until incorporated.
Meanwhile, place milk in a small pot over medium heat and scald it.
Immediately remove from heat and slowly pour over the melted
chocolate, stirring constantly. Pour into mugs and serve immediately.

WHITE CHOCOLATE CAPPUCCINO
serve 8

4 cups whole milk
1 vanilla bean, split lengthwise
10 ounces good-quality white chocolate (such as Lindt or Baker's), chopped
2 1/2 teaspoons brandy
2 1/2 teaspoons vanilla extract

4 cups hot strong fresh-brewed coffee
Unsweetened cocoa powder

Pour milk into heavy medium saucepan. Scrape in seeds from vanilla bean; add bean. Bring to boil. Remove from heat. Add white chocolate; whisk until melted and smooth. Whisk in brandy and vanilla extract. Using tongs, remove vanilla bean. Return white chocolate mixture to low heat; whisk until frothy, about 1 minute.

Pour hot coffee into mugs. Ladle white chocolate mixture over. Sprinkle with cocoa powder and serve.

WHITE CHOCOLATE AND PEPPERMINT HOT CHOCOLATE
serve 4

2/3 cup chilled whipping cream
8 hard red-and-white-striped peppermint candies, coarsely crushed

3 1/2 cups milk
8 ounces good-quality white chocolate (such as Lindt or Baker's), chopped
1/2 teaspoon peppermint extract
Additional coarsely crushed peppermint candies

Beat cream and 8 crushed candies in medium bowl until stiff peaks form. Cover and refrigerate whipped cream.

Bring milk to simmer in heavy large saucepan over medium-high heat. Add white chocolate; whisk until melted and smooth. Bring to simmer, whisking constantly. Mix in peppermint extract. Ladle into 4 mugs. Top with dollops of whipped cream. Sprinkle with additional coarsely crushed candies and serve.

BRANDY ALEXANDER WHITE HOT CHOCOLATE
Makes about 4 cups, serving 4 to 6.

3 1/2 cups milk
1/2 of a vanilla bean, split lengthwise
6 ounces fine-quality white chocolate, chopped fine, plus shaved white chocolate for garnish
1/3 cup Cognac or Armagnac, or to taste
3 tablespoons dark or white cr me de cacao, or to taste
Whipped cream for garnish

In a large heavy saucepan, combine the milk, the vanilla bean halves, and a pinch of salt and bring the mixture just to a boil over moderate heat. Remove the pan from the heat and let the mixture stand, covered, for 15 minutes. Scrape the seeds form the vanilla bean back into the mixture, discarding the pods, and reheat the mixture until it just comes to a boil. In a small heatproof bowl, combine the chopped chocolate with about 2/3 cup of the hot milk mixture and whisk the mixture until the chocolate is melted and the mixture is smooth. Whisk the chocolate mixture into the remaining milk mixture and simmer the hot chocolate, whisking, for 2 minutes. Stir in the Cognac and the cr me de cacao. (For a frothy result, in a blender blend the hot chocolate in batches.) Divide the hot chocolate among mugs and top it with the whipped cream and the shaved chocolate.

White Hot Chocolate Mix
A great idea for a major chocoholic

1 tsp. vanilla powder
1 tsp. dried orange peel
1/2 cup grated white chocolate or white chocolate chips

Combine and blend the ingredients in a small bowl. Store in an airtight container.

Attach this to the Jar

White Hot Chocolate Serves 2
1 and 1/2 cups milk
1/4 cup White Hot Chocolate Mix

In a small saucepan, heat the milk until bubbles form around the outside.
Add the White Hot Chocolate Mix and whisk until the chocolate is melted.
Continue to whisk until the mixture is hot.
