8-18-99 Recipes Using Rice Part 1

1 frying chicken or 2 lbs. of your favorite pieces of chicken
1 cup uncooked rice
1 tsp. salt
1 can cream of mushroom soup
1 can cream of chicken soup
2 cups milk
1 onion, chopped

Cover bottom of a greased 2-qt. baking dish with the rice. Pour 1 1/2 cups milk over rice and add the salt and onions. Spread chicken on top of rice, combine the soups and 1/2 cup of milk and pour over chicken. Bake 2 hours at 250 degrees.

Frog Eye Salad

1 cup sugar
2 tablespoons flour
1/2 teaspoon salt
1 3/4 cups pineapple juice
2 eggs -- beaten
1 tablespoon lime or lemon juice
1 pkg Acini de Pepe or other tiny pasta
2 (15oz) cans mandarin oranges -- drained
2 (20oz) cans pineapple, crushed or tidbits, or 1 of - drained each
1/2 to 1 cup maraschino cherries -- cut in half
1 (8oz) carton frozen whipped topping ( or more if desired) -- thawedCombine sugar, flour and salt in a saucepan. Gradually add in juice and eggs. Cook and stir over med. heat until thickened. add lime juice. Cool to room temp. Meanwhile, cook pasta according to pkg. directions. Drain and rinse with cold water and drain again. When pasta has cooled to room temp., combine it with the pineapple juice mixture and the remaining ingred. This makes a whole bunch. Store tightly covered in the refrigerator.

NOTES : Acini de Pepe is pearl shaped pasta. Look for it on the pasta aisle at the store. "Cremettes" is one brand of it.Susan,IL (10:24:53) :

Herbed Cornish Hens

Serving Size : 4

1 package Rice-a-roni Long grain and Wild Rice -- 4.3 ounce
1/2 cup dry white wine or orange juice
1/3 cup onion -- chopped
1/3 cup celery -- chopped
1/3 cup carrot -- shredded
4 rock Cornish game hens, or 3# whole chicken
1/4 cup margarine or butter -- melted
1 teaspoon tarragon
1 clove garlic -- minced
1/4 teaspoon salt

Heat oven to 375 degrees. Prepare Rice-a-roni according to package directions using 1 1/2 cups water and 1/4 cup wine. Add onion, celery and carrot during last 5 minutes of cooking. Rinse hens, pat them dry. Trim excess fat. Stuff hens with rice mixture; tie legs together with string. Place hens, breast side up on a greased rack of a broiling pan. Bake 45 minutes, Brush with combined remaining wine, margarine, tarragon, garlic and salt. Continue baking 45 to 55 minutes until juices run clear when pierced with fork, brushing with sauce occasionally.Debbie.D.,.AL (10:15:37) : RICE-ASPARAGUS CASSEROLE

1/4 margarine (1/2 stick)
1/2 cup slivered almonds
1 cup cooked rice
1 can cream of mushroom soup
1/2 cup milk
1 15-oz. can asparagus, drained
1 cup grated sharp cheese
1 cup bread crumbs

Melt the margarine in a casserole dish. Add almonds and return to the oven to toast lightly. Add rice and mix well. Combine soup with milk and pour over rice mixture, but do not mix. Lay asparagus on top and gently press down into the soup. Top with cheese and bread crumbs. Bake in a 300 degree oven until bubbly. Serves 4-6.Debbie.D.,.AL (10:05:59) : ALABAMA CHICKEN AND RICE CASSEROLE

1 can cream of mushroom or cream of chicken soup
1 soup can milk
3/4 cup uncooked rice
1 4 oz. can mushrooms, drained
1 pkg, dry onion soup mix
4 chicken breast halves (with bone)
1/4 cup white wine
1 clove garlic, minced
1 onion, sliced and separated into rings
1 red bell pepper, sliced thinly

Combine the mushroom soup, white wine, and milk in a mixing bowl; reserve 1/2 cup of the mixture. To the remaining soup mixture add the rice, mushrooms, onions, garlic, and bell pepper and 1/2 the onion soup mix. Pour into an ungreased 13X9 inch baking dish. Place the chicken breasts on top. Pour the reserved soup mixture over the chicken breasts; sprinkle with remaining onion soup mix. Cover with aluminum foil. Bake in a 350 degree oven for 1 hour. Uncover and bake 15 minutes. NONIE'S FARMER'S RICE SALAD

3 cups rice -- cooked and cooled
1/2 cup onion -- chopped
1/2 cup sweet pickles -- chopped
1/2 cup celery -- chopped
1/4 cup green peppers -- chopped
3 eggs -- boiled and chopped
1 small jar pimento
1 tablespoon prepared mustard
1 cup mayonnaise
salt

Blend all ingredients thoroughly. Chill.
This is a wonderful replacement for potato salad.KellyWA (08:05:25) :

"San Francisco" Rice

This recipe came from a magazine article back in the 1970's. It has been modified it somewhat over the years. It supposedly tastes better than beef and chicken Rice-a-Roni which, in addition to shrinking box sizes seem to have become more starchy tasting lately.

1/2 cup rice
1/2 cup vermicelli (broken in pieces) OR
1/2 cup orzo
2 tablespoons butter or margarine
2 cups water
2 chicken or beef bouillon cubes
1/2 teaspoon seasoned salt
1/4 teaspoon garlic powder (optional)
1 tablespoon parsley

Melt butter in a large skillet with a lid. Brown vermicelli or orzo in butter. Add rice and stir to coat with butter. Add water, bouillon cubes and spices. Cover pan and simmer 20 minutes.KellyWA (05:05:58) : Get Together Rice

Yield: 2 servings

1/2 c Uncooked Rice 1/3 lb Honey Roast Ham
2 tsp Corn Oil
2 tsp Soy Sauce
1/4 c Diced Onion
1 tsp Sugar
2 Scallions, sliced
1 tbsp Peanut Oil
1/2 c Snow Peas
1 Egg
1/2 c Fresh Bean Sprouts
1 x Salt

Fill a saucepan with water and add the rice.

Bring the water to a boil and let the rice boil freely for 9 minutes or until it is cooked through.

Drain and stir in the 2 tablespoons of corn oil.

While rice is cooking, wash and cut all of the vegetables and ham into very small diced pieces. Mix the soy sauce and sugar together.

Heat a wok or frying pan and add the peanut oil. When it is smoking, add the onions and stir fry for 1 minute. Add the scallions and continue to fry for another 30 seconds.

Add the ham, snow peas, sprouts and rice and stir fry for 3 minutes. Push the ingredients aside, making a hole in the center.

Crack the egg and drop it into the hole, beating to mix the yellow and white.

Mix into the other ingredients. Again, make a hole and add the soy sauce. Toss all of the ingredients together and continue to fry another 3 - 4 minutes.

Taste for seasoning. Add salt if necessary.

Serves 2.KellyWA (05:03:07) : Nutty Rice

3 tbsp Butter
1/4 tsp (to 1/2 tsp) crushed
Dried hot red peppers
1/3 c Chopped macadamia nuts
3 c Cooked long-grain
White rice, heated

Melt the butter in a large skillet over medium heat. Stir in the dried red peppers according to taste and the macadamia nuts. Cook, stirring constantly, until the nuts begin to turn golden, 3-4 min.

Reduce the heat and lightly toss in the cooked rice. Serve immediately or keep warm in a 225 F oven.
