calliope,.NY (08:58:32) : GRAPEFRUIT SHERRY ASPIC
2-1/2 Tbsp. gelatin, soaked in;
1/2-cup cold water
1/2-cup sugar dissolved in;
1-cup water in a saucepan over moderate heat
Stir the "bloomed" gelatin mixture into the hot syrup till dissolved.
Cool to room temp. Don't wait too long to finish this so that the gelatin doesn't start to actually set and start to get rubbery!
Mix;
2-cups plus 6 Tbsp. grapefruit juice (try the pasteurized Ruby Red variety in a carton, for a pretty color! or just use regular.)
3-Tbsp. fresh lemon juice
1/2-cup dry sherry
1/4-tsp. salt
Add the cooled gelatin mixture and whisk till you get a light foam.
Pour into a bowl to serve from or an oiled mold if you wish to later unmold it, and chill till its set.
Serving suggestions;
Top it with pomegranete seeds and/or;
Serve avocado slices along side it, and even some cream cheese balls rolled in chopped nuts of your choice.
NOTE from Calliope.........I make this every Thanksgiving. Its such a lovely palette cleanser for such a heavy meal! Therefore, I often serve it with other meals that are a bit heavy.
* Serve this with avocado slices, if possible, and balls of cream or goat's cheese, rolled in nuts...if you wish.

1-large glass jar of Fava beans ( personal note......from Rubinos,Cento's)
Saute in olive oil with one large garlic clove, sliced,
salt, pepper, dill and parsley to taste, for about 5 minutes.
* don't let garlic brown!!!...it makes it bitter! *
Dress while still warm with;
1/4-cup olive oil
2-Tbsp. balsamic vinegar
2-Tbsp. fresh lemon juice
1-tsp. Dijon mustard
Chill in the 'fridge and add about a half cup red onion sliced paper thin.
Or you could just let the beans cool to room temp. after dressing, and then add the onion and serve right away, if you like. It doesn't need to marinate, and at room temp, everything has more flavor anyway!

36-48 shrimp...sauteed till barely done...in 1/3 cup olive oil
Add, immediately, a mixture of;
2-3 Tbsp. fresh chopped rosemary
4-cloves, finely minced garlic
1/2-cup dry white wine
1/4-cup fresh lemon juice
black pepper, to taste
Bring back just to the boiling point...remove, immediately
Put into a glass or ceramic bowl. Serve right away or you can refrigerate over-night and serve at room temp. the next day..
Serve with crusty bread, toasted..cubes of mild cheese such as chevre, fontina or even the lovely salty feta and fruit(i.e....grapes, apples..melon.
(10:41:07) : Shepherd's Pie
1 lb. ground beef
1 jar beef gravy
1 small onion, chopped
2 or 3 carrots, chopped
refrigerated mashed potatoes
Brown ground beef with carrots and onion. Drain well. Add gravy and stir. Pour into 10 inch round pie plate. Frost with mashed potatoes. Bake at 350 degrees until heated through (about 30 minutes). Can add shredded cheddar cheese for last 10 minutes of baking.

8 oz. cream cheese
1/8 tsp. ginger
1 (7oz.) jar marshmallow creme
Mix well and let set in refrigerator for least 6 hours. Serve with apples, bananas, oranges, grapes or any other fruit of your choice.

Pizza Dip
8 oz. cream cheese, softened
1 Tbls. Italian seasoning
1 jar pizza sauce
3/4 cup parmesan cheese
8 oz. shredded cheese (cheddar and mozzarella work well)
Mix together cream cheese and Italian seasoning. Spread in bottom of pie plate. Sprinkle 1/2 of parmesan cheese. Spread with pizza sauce, rest of parmesan cheese and shredded cheese. Warmin 400 degree oven for 10 minutes. Serve with bread sticks.

Caramel Apple Dip
8 oz. softened cream cheese
1/2 cup brown sugar
2 teaspoons vanilla
Mix well and spread on plate or in a quart dish. Top with caramel topping (Smuckers ice cream topping for sundaes) and sprinkle with chopped nuts on top. Dip thin sliced apples in orange juice (to keep from browning) and arrange on outside of plate.

Ham and Cheddar Roll Ups
1 package refrigerated crescent rolls
prepared mustard
1/4 cup shredded cheddar cheese
1/4 cup finely chopped cooked ham
Unroll crescent rolls. Tear along perforations. Place 4 triangles on an ungreased baking sheet. Spread lightly with mustard. Sprinkle each with 1 tablespoon cheese and 1 tablespoon cooked ham. Starting at large end, roll dough toward point. Fold each ends in slightly to form "horns." Bake at 375^ for 11 to 13 minutes.

Lollipop Cookies
1 box any flavor cake mix
2 eggs
3/4 cup water
24 ice cream sticks
1 can of favorite frosting
Stir cake mix, eggs and water. Mix well. Place 1 tablespoon on greased cookie sheet. Put an ice cream stick in the side, so it looks like a lollipop. Bake at 350^ for 10 minutes. Cool and
then frost with your favorite frosting.

Yummy Potato Wedges
4 medium potatoes
3 tbls. mayonnaise
1 pkg. (.4 oz) dry buttermilk ranch dressing
Scrub potatoes clean. Cut each potato into 8 wedges. In a deep bowl. mix together mayonnaise and dry buttermilk dressing. Put potatoes in bowl and toss well ( this gets kinda messy, but fun!) Place potatoes on a baking sheet and bake at 400 degrees for 40 minutes.

Pineapple Smores
16 graham cracker squares
1 cup miniature marshmallows
2 tablespoons chocolate chips
1 8 oz. can crushed pineapple, well drained
Arrange 8 graham crackers in a single layer in 8 inch square microwave-safe dish. Evenly spoon marshmallows, chocolate chips and pineapple over crackers. Microwave on high for 1 minute. Let stand 1 minute to cool. Place remaining crackers on top.

Banana Yogurt Salad
2 large bananas
2 cups yogurt
1/4 cup nuts, chopped
orange sections
Peel and split bananas; place in two serving dishes. Spoon yogurt onto each banana. Sprinkle with nuts and surround with orange sections.

Bubble Pizza
2 tubes of buttermilk biscuits
1 160z. can pizza sauce
1 lb. ground beef, cooked and drained
2 cups mozzarella cheese, grated
2 cups cheddar cheese, grated
Quarter the biscuits and mix with ground beef and pizza sauce. Place in a a 9x13 pan. Bake for 20 minutes at 400 degrees. Remove from the oven and top with the cheeses. Bake an additional 10 minutes and then let stand for 10 minutes before serving.

14 oz. pkg. caramels
1 can sweetened condensed milk
1/2 cup butter
Rice Krispies
Large marshmallows
Melt caramels, milk and butter. Dip large marshmallows into mixture. Roll in Rice Krispies,let set on waxed paper. Eat!

Apple-Glazed Roast Pork
Ready In: 10 - 12 hours
Servings: 8
4 lb Pork loin roast
6 Apples
1/4 cup Apple juice
3 Tbsp Sugar, brown
1 tsp Ginger, ground
Directions:
Rub roast with salt and pepper. Brown pork roast under broiler to remove excess fat; drain well.
Core and quarter apples. Place apple quarters in bottom of crockpot. Place roast on top of apples.
Combine apple juice, brown sugar, and ginger. Spoon over top surface of roast, moistening well.
Cover and cook on Low 10-12 hours, until done.

2 Eggs beaten
1 c Sugar
2 c Chopped dates
1 c Chopped walnuts
Mix all together & drop by tsp. into shredded
coconut. Form into balls. Cook on greased cookie sheet
in slow oven 275 until coconut is lightly browned

1 pound ground beef
1 can (11 ounces) Cream of Mushroom Soup (can use low calorie soup)
1 package Tater tots
Salt & Pepper to taste
Combine ground beef, and soup, mix with hands. Press ground beef mixture into a
casserole dish, sprinkle with salt and pepper. Add Tater tots to top of ground
beef mixture. Bake for 1 hour in a 350 degree oven. Serves 6
