Bisquick Cheddar Garlic Biscuits

2 cups Bisquick mix
2 TBSP melted butter
2/3 cup milk
1/8 tsp garlic powder
1/2 cup shredded Cheddar cheese

Heat oven to 450 degrees. Mix Bisquick, milk & shredded cheddar cheese together to form soft ball. Drop by spoonfuls onto ungreased cookie sheet. Bake 8 - 10 minutes. Mix butter & garlic powder together & brush over warm biscuits.

Leftover stew Idea
This is one of my favorite things as a kid and even when I making it now and it is simple.
Take leftover stew and add about one cup of frozen green peas and put mixture in a casserole dish big enough to handle all the food. Mix some drop biscuits from your favorite biscuit mix and put the dough in spoonfuls on top of the stew mixture. Bake at 350 until biscuits are done and casserole is heated through. It is a one dish wonder for those nights you are in a hurry.

Streusel-Topped Pumpkin Muffins
Yield: 12

2 c bisquick baking mix
1/3 c raisins or dried apricots; snipped
1/4 c sugar
1 tsp ground cinnamon
3/4 tsp ground nutmeg
1/2 tsp ground ginger
1/4 c milk
1/4 c vegetable oil
1/2 c canned pumpkin
1 egg
STREUSEL TOPPING
Combine:
1/3 c Bisquick baking mix
3 tbsp packed brown sugar
2 tbsp nuts; chopped

Heat oven to 400 degrees. Grease bottoms of 12 medium muffin cups, 2-1/2 x 1-1/4 inches or line with paper baking cups. Mix baking mix, raisins, sugar, cinnamon, nutmeg and ginger in medium bowl. Beat milk, oil, pumpkin, and egg until smooth. Stir into raisin mixture; beat vigorously 30 strokes. Fill muffin cups about 3/4 full. Sprinkle Streusel Topping over batter in each cup. Bake until tops spring back when touched in center, 15-20 minutes.

Quick Applesauce Muffins
Yield: 12 servings

2 c bisquick
1/4 c sugar
1 tsp cinnamon
1/2 c applesauce
1/4 c milk
1 egg
2 tbsp cooking oil

----------------------------------TOPPING----------------------------------
1/4 c sugar
1/4 tsp cinnamon
2 tbsp butter or margarine, melted

Preheat oven to 350 degrees F.

Combine Bisquick, 1/4 cup sugar, and 1 teaspoon cinnamon. Add applesauce, milk, egg and oil, and beat vigorously for 30 seconds. Fill greased muffin pans 2/3 full and bake 12-15 minutes. Cool slightly and remove from pans. Mix remaining sugar and cinnamon. Dip tops of muffins in melted butter, then in sugar-cinnamon.

Crustless Sausage-Apple Quiche
Recipe by: Southern Living Annual Recipes 1987

1/2 lb bulk pork sausage
1 1/2 cup finely chopped apple
1/2 tsp ground cinnamon
1/2 tsp ground nutmeg
1 cup shredded sharp cheddar cheese
4 eggs, beaten
1 cup half & half
1/2 cup biscuit mix

Cook sausage until browned, stirring to crumble; drain well. Set aside. Combine apple, spices, cheese and sausage. Spoon into 9-inch quiche dish or deep-dish pie plate. Combine eggs, half & half, and biscuit mix in a mixing bowl; mix well. Pour over apple mixture. Bake at 375 degrees for 40 minutes or until set.

No Crust Quiche
Yield: 6 servings

1 1/2 c milk
1/2 c bisquick baking mix
6 tb butter or margarine, softened
3 eggs

1 c diced ham, turkey, chicken, bacon or broccoli (or whatever you like)

2 green onions, chopped
4 oz can sliced mushrooms
1 c shredded cheddar cheese

Combine the first four ingredients in a blender and mix well. Turn into ungreased 10-inch pie plate. Add meat or vegetables, poking into batter. Top with onions, mushrooms and cheese. Bake in 350 degree oven until top is golden brown, about 45 minutes. Let stand 10 minutes before serving.

Bisquick Fudge Brownies

2 c chocolate chips (divided)
1/4 c margarine
1 can sweetened condensed milk
2 c biscuit baking mix
1 eggs; beaten
2 c biscuit baking mix
1 tsp vanilla

Preheat oven to 350 degrees F. In large saucepan, over low heat, melt 1 cup chips with margarine; remove from heat. Add biscuit mix, condensed milk, egg and vanilla. Stir in remaining chips. Turn into well greased 13x9" pan. Bake 20 to 25 minutes or until brownies begin to pull away from sides of pan. Cool. Garnish as desired. Cut into bars.

CHICKEN MADEIRA ON HERBED BISCUITS
FROM: Better Homes and Gardens Magazine September 1992

1 1/2 lb chicken breast skinned boned
1 tb cooking oil
2 cloves garlic, minced
4 1/2 c quartered fresh mushrooms
1/2 c chopped onion
1 c low-cal sour cream
2 tb all purpose flour
1 c skim milk
1/2 c chicken broth
2 tb Madeira or dry sherry
recipe herbed biscuits

Cut chicken into 1 inch cubes.

In a 12 inch skillet cook chicken in hot oil over medium-high
heat for 4 - 5 minutes or till no longer pink. Remove chicken; set
aside. Add garlic, mushrooms and onion to skillet. Cook, uncovered,
for 4 - 5 minutes or till liquid evaporates.

In a bowl stir together sour cream, flour, 1/2 teaspoon salt and
1/4 teaspoon pepper. Add sour cream mixture, milk, and broth to
skillet. Cook and stir until bubbly. Cook 1 minute more. Add chicken
and Madeira or sherry; heat through. Serve over Herbed Biscuits.
Sprinkle with thinly sliced green onions if desired.

Makes 6 servings.

HERBED BISCUITS: In a mixing bowl stir together 1 3/4 cup packaged biscuit mix, 2 TABLESPOONS thinly sliced green onion, and 1/2 teaspoon crushed, dried oregano. Add 1/2 cup skim milk; stir just until dough clings together. On a floured surface knead dough 10 to 12 strokes. Roll to a 1/2 inch thickness. Using a 2-inch biscuit cutter, cut dough into 12 biscuits. Reroll the trimmings as necessary. Bake biscuits on an ungreased baking sheet in a 425 degree oven for about 12 minutes.

Apricot-Praline Muffins

1/2 cup pecan halves -- chopped
1/2 cup margarine -- melted
1/2 cup dried apricots
1/2 cup packed brown sugar
1 teaspoon ground cinnamon
2 cups biscuit mix
2/3 cup milk

Preheat oven to 425 degrees. Grease a 12-cup muffin pan.

1. Fit the steel knife blade into the work bowl. Process the pecans until chopped into 1/8-inch pieces. Distribute chopped pecans evenly in muffin cups. Put 2 teaspoons melted margarine in each cup.

2. With the steel knife blade still attached, process apricots until chopped into 1/4-inch pieces. Add brown sugar, cinnamon, biscuit mix and milk. Process until batter is well mixed, 10-15 seconds, stopping machine once to scrape down sides of bowl with rubber spatula. Pieces of apricots should still be visible.

3. Drop by spoonfuls into muffin cups. Bake until a wooden pick inserted in center of a muffin comes out clean, about 15 minutes. Do not push pick all the way to bottom. Remove from oven and invert muffin pan on a serving plate. DO NOT remove pan; let stand 10 minutes so pecans and margarine will drop down onto muffins.

Yield: 12 muffins

Deluxe Chicken Supper with Biscuits

Makes 6-8 servings

3 bacon slices
3/4 cup chopped onion
1/2 cup chopped celery
1/4 cup chopped green bell pepper
1 (4 ounce) can sliced mushrooms, drained
1 (10 3/4 ounce) can condensed cream of celery soup
3 cups diced cooked chicken
1/4 teaspoon salt
1/8 teaspoon ground black pepper
2 teaspoons Worcestershire sauce
1 tablespoon milk

FOR THE BISCUITS:
2 cups Bisquick Baking Mix
2 eggs, slightly beaten
1/2 cup milk
1 tablespoon chopped pimiento
1 cup shredded cheddar cheese

Fry bacon in skillet until crisp. Remove and drain on paper towels. Crumble.

Saute onion, celery, green pepper and mushrooms in bacon drippings until tender.

Combine (undiluted) soup and sour cream in a bowl. Add chicken, salt, Worcestershire sauce, pepper, 1 tablepoons milk, bacon and sauteed vegetables; mix well. Turn into greased 2-quart casserole.

Combine biscuit mix, eggs, 1/2 cup milk, pimientos and cheese; mix until just blended. Drop by spoonfuls on top of chicken mixture.

Bake 350 degrees F for 45 minutes or until biscuits are golden.

IMPOSSIBLE PECAN PIE

Eggs
3/4 cup Sugar
4 tablespoons Butter
2 cups Milk
1/2 cup Bisquick
1 cup Pecans

Grease 10" pie plate. Beat all ingredients (except pecans) in blender until smooth. Add pecans. Bake in 350~ oven for 45 minutes.

Tuna Melt Pie

2 medium Onions, chopped
1 cup Bisquick baking mix
1 1/4 cups Milk
1/4 cup Butter
1/8 tsp Pepper
2 can (6 1/2 oz ) tuna, drained
3 Eggs
2 tbsp sliced
2 cups Shredded Cheddar cheese

Heat oven to 400 degrees. Grease square baking dish, 8 x 8 x 2". Cook onions and margarine in 10" skillet over low heat, stirring occasionally, until onions are light brown. Sprinkle tuna, 1 cup of the cheese and the onions in dish. Beat baking mix, milk, pepper and eggs with wire whisk or hand beater until almost smooth, about 1 minute. Pour into dish. Bake until knife inserted in center comes out clean, 25 to 30 minutes. Top with tomato slices and remaining cheese. Bake until cheese is melted, 3 to 5 minutes. Cool 5 minutes.

Low-Calorie Pumpkin Pie

1 can solid-pack pumpkin -- (16 ounces)
2 tablespoons sugar
1 can evaporated skim milk -- (13 ounces) *
8 packages sugar substitute -- (16 tsp-1/3c
1 egg
2 teaspoons pumpkin pie spice
2 egg whites
2 teaspoons vanilla
1/2 cup biscuit mix like bisquick

Heat oven to 350 F. Lightly grease or spray 9 inch pie pan with vegetable pan spray. Place all ingredients in blender, food processor or mixing bowl. Blend 1 minute or beat 2 minutes with mixer. Pour into pie pan and bake for 50 minutes or until center is puffed up.

carbohydrate, 6.3 grams protein, 1.9 grams fat, 1.4 gm fiber 174.9 mg

Greek Cheese Appetizers

2 cups Bisquick
1 cup Buttermilk or Milk
2 Eggs
1/4 cup Margarine or Butter Melted
8 oz Feta or Blue Cheese Crumbled
1/2 tsp Salt

Heat oven to 350 degrees F. Grease baking pan 13 x 9. Mix baking mix milk and eggs. Spread in pan. Drizzle with melted margarine or butter. Sprinkle with cheese and salt. Bake until deep golden brown 35 to 40 min. Cool 10 min. Cut into 2 inch squares; cut squares diagonally into halves. Garnish with black or green olive slices.
