8-16-99 Recipes Using Peanut Butter Part 3

Terrytx (10:30:00) : Chocolate Peanut Butter Pie

Filling
16 oz cream cheese
2 cups creamy peanut butter
1 3/4 cups sugar
1 cup whipping cream
1 9" baked pie crust
Topping
1/3 cup sugar
2/3 cup whipping cream
3 oz semisweet chocolate
1 stick butter
1 tsp vanilla
toasted peanuts

Mix cream cheese, peanut butter and sugar in a bowl until blended. Whip cream (chill cream, bowl and beaters well), then fold into peanut butter mixture. Spoon filling into crust.

For topping: Combine sugar and cream in a saucepan; bring to a boil. Reduce heat and simmer 7 min. Remove from heat. Add chocolate and butter; stir until melted. Stir in vanilla. Cool until slightly thickened. Pour evenly over filling. Chill 4 to 5 hrs before serving. Garnish with toasted peanuts.

(Makes 8 servings)

1 pkg. instant vanilla pudding mix (4 serving size)
1 15-1/4 ounce can pineapple chunks, drained
2 cups finely crushed graham crackers
1/2 cup packed brown sugar
1/2 cup Jif Peanut Butter
Whipped cream (optional)
Maraschino cherries (optional)

Prepare pudding mix according to package directions, except use 2 1/2 cups milk. When thick, fold in pineapple. In mixing bowl, blend graham cracker crumbs, brown sugar, and Jif. Turn half the pudding mixture into a buttered 8x8x2-inch pan. Top with half the peanut butter mixture. Repeat layers. Cover and chill. Garnish with whipped cream and maraschino cherries, if desired.

1 package (18-1/4oz) devil's food cake mix
1 cup butter or margarine -- melted
1 jar (7oz) marshmallow cream
3/4 cup peanut butter

In a bowl, combine cake mix and butter; mix well. Set aside 1 cup for topping. Spread remaining cake mixture into a greased 13x9" baking pan. Combine the marshmallow cream and peanut butter; carefully spread over cake mixture. Crumble reserved cake mixture over the top. Bake at 350 degrees for 18-20 min. or until toothpick inserted in the middle comes out with moist crumbles. (Do not overbake) Cool completely. Cut into squares. (Makes 2 dozen treats)

3 tablespoons butter or margarine
1 package (10 ounces) marshmallows
1/2 cup Reduced Fat
Jif Creamy Peanut Butter Spread
6 cups crisp rice cereal

Butter 13 x 9 x 2-inch pan. Melt butter in large saucepan on low heat. Add marshmallows. Stir until completely melted. Remove from heat. Add Jif. Stir until well blended. Add cereal. Stir until well coated. Press into buttered pan. Cool completely. Cut into 24 squares.

(Makes about 4 cups)

4 cups sweet shredded oat cereal
1 cup peanuts
1/4 cup butter or margarine
1/4 cup Jif Creamy Peanut Butter
1 teaspoon ground cinnamon

In large bowl, combine cereal and peanuts. In small saucepan heat butter or margarine, Jif, and cinnamon over low heat until butter and Jif are melted. Stir until blended. Slowly pour over cereal mixture, mixing well. Spread out in a 13x9x2-inch baking pan. Bake in 350 F oven 10 to 12 minutes; stir occasionally. Coo

1 1/4 c. graham crackers (15 squares)
1/4 c. sugar
1/2 t. cinnamon
1/2 t. nutmeg
1/2 c. peanut butter
1/3 c. white karo syrup

Crush crackers, add sugar, cinnamon and nutmeg, Mix well. Stir in peanut butter and karo, blend well. Roll into balls. Sprinkle with confectioners sugar if desired.

Make a PBJ Sandwich, spread margarine lightly on both sides. Heat pan, and grill sandwich like you would a grilled cheese sandwich! (Or I use a sandwich maker) Be careful not to use too much jelly! They leak!

MED/TN (09:18:31) : PEANUT-CHOCOLATE PUDDING DESSERT

1/2 cup butter or margarine softened
1 cup all-purpose flour
2/3 cup finely chopped dry roasted peanuts
1 (8 oz.) package cream cheese, softened
1/3 cup peanut butter
1 cup sifted powdered sugar
1 (12 oz.) container Cool Whip
1 (3 1/2 oz.) package vanilla instant pudding mix
1 (4 oz.) package chocolate instant pudding mix
2 3/4 cups milk
1 (1.2 oz.) milk chocolate candy bar, shaved
1/3 cup chopped dry roasted peanuts

Cut butter into flour; stir 2/3 cup peanut mixture into 9x13 pan. Bake at 350 for 15-20 min; cool completely.

Combine cream cheese, peanut butter, and sugar; beat until fluffy. Stir in 1 cup whipped topping. Spread over crust; chill.

Combine pudding mixes and milk; beat 2 min. Spread over cream cheese layer. Spread remaining whipped topping over pudding layer. Sprinkle with chocolate and 1/3 cup peanuts. Chill. YIELD: 15 servings

1/2 c Brown Sugar, Packed
1/2 c Sugar
2 C Oatmeal
1/2 Tsp Vanilla
1/2 C Butter Or Margarine -- melted
Topping
1/2 C Peanut Butter
1/2 C Milk Chocolate Chips

Mix sugars, oatmeal and melted butter. Press into a 9 x 13 pan.
Bake 375 F for 15 to 20 minutes.
Melt peanut butter and chocolate. Spread over cooled bars.

1 pound butterscotch chips
1 peanut mold
1/2 cup peanut butter

Melt 1 pond butterscotch; add 1/2 cup peanut butter and blend well. Fill peanut molds and chill in freezer until candy is firm. Turn out and serve.

1/4 pound Margarine
1/2 Pound Peanut butter
3/4 pound powdered sugar
1/4 cup light corn syrup -- optional

Mix together for filling for peanut butter cups or balls

This is the filling I use for my home made peanut butter cups. I just roll it into balls and dip them in melted chocolate.

2 1/2 Cups flour -- unsifted
1 teaspoon baking powder
1 teaspoon baking soda
1/4 teaspoon salt
1 cup Margarine
1 cup peanut butter
1 cup sugar
1 cup brown sugar -- firmly packed
2 eggs
1 teaspoon vanilla
1 bag Hershey's Kisses

Stir together first 4 ingredients; set aside. In large bowl with mixer at medium speed, beat margarine and peanut butter until smooth. Beat in sugars until blended. Beat in eggs and vanilla. Add flour mixture; beat until well blended. If necessary, chill dough. Shape into 1 inch balls. Roll in sugar. Place 2 inches apart in ungreased cookie sheets. Bake in 350 degree oven for 15 to 18 minutes or until golden brown. Remove from oven. Immediately press candy kiss into the middle of the cookie (cookie will crack around edges).
Yield: 6 dozen
