Recipe: Jan's Bread Machine Sugar Cake (bread machine dough cycle)

JAN'S BREAD MACHINE SUGAR CAKE
(bread machine dough cycle)

FOR THE DOUGH (1 1/2 lb.):
5/8 cup warm water (90-115 degrees F)
2 large eggs, beaten
1/2 cup butter, melted
1 teaspoon vanilla
1/2 cup white granulated sugar
3 cups flour
1/2 cup instant potato flakes
1 teaspoon salt
2 teaspoons bread machine yeast

FOR THE TOPPING:
1 cup brown sugar
2 teaspoons cinnamon
1/2 cup butter, melted

FOR THE ICING:
3/4 cup powdered sugar
4 teaspoons milk

Place dough ingredients in machine; select dough cycle/setting.

Meanwhile, grease a 15x10- or 16x12-inch baking pan. Combine brown and cinnamon for the topping; set aside. Set aside.

When dough cycle has completed. Turn dough out onto floured board. Stretch dough to fit in the prepared pan. Press evenly in pan. Sprinkle with the topping mixture and drizzle with 1/2 cup melted butter.

Cover and let rise 30-45 minutes or until doubled in size.

Bake in preheated 350 degrees F oven for 15-20 minutes or light brown.

For the icing, mix powdered sugar and milk together. Drizzle onto cake while warm.
