1 1/2 sticks butter
1 1/2 cups sugar
1 1/2 tsps. baking poweder
3/4 tsp. each baking soda and salt
3 large eggs
2 cups (about 4 large) mashed ripe bananas
3 cups flour
1 1/2 cups (9 oz.) semisweet mini-chips
3/4 cup walnuts, chopped

Heat oven to 350. Coat insides of 5 small disposable aluminum loaf pans with PAM. Beat butter, sugar, baking powder, baking soda, and salt in a large bowl with mixer on medium-high speed 3 minutes or until pale and fluffy. Add eggs 1 at a time, beating after each just until blended. Beat in bananas. Reduce speed to low and gradually add flour, beating just until blended. Stir in chocolate chips and nuts. Divide evenly among prepared pans. Bake 50 to 55 minutes or until a wooden pick inserted in centers of cakes comes out clean. Cool completely in pans on a wire rack. Makes 5 mini-loaves.
