Recipe: Rhubarb-Apple Crumble

RHUBARB-APPLE CRUMBLE

2 cups sliced fresh or frozen rhubarb
1 cup sliced apples
1 cup sugar
3 tablespoons all-purpose flour
1/2 teaspoon ground cinnamon
1 1/2 cups quick-cooking oats, uncooked
1 cup firmly packed light brown sugar
1 cup all-purpose flour
1/2 cup butter, cut into 1-inch pieces
Vanilla ice cream (optional, for serving)

Preheat oven to 375 degrees F. Grease a 10x10-inch baking dish.

Combine first five ingredients in large bowl and mix thoroughly. Spoon evenly into dish.

Combine oats, brown sugar flour and butter in another large bowl and mix until crumbly. Sprinkle over rhubarb-apple mixture.

Bake about 40 minutes or until top is lightly browned.

Serve warm with vanilla ice cream, if desired.

Makes 4-6 servings
