Recipe: Rhubarb Pizza (with crumb topping) - 3 recipes

RHUBARB PIZZA

FOR THE CRUST:
1 cup flour
1/4 cup sugar
2 tbsp. shortening
1 tsp. baking powder
1/4 tsp. salt
1 egg
2 tbsp. milk

FOR THE RHUBARB LAYER:
3 cups sliced rhubarb
1 (3 oz.) pkg. strawberry Jello

FOR THE TOPPING:
1 cup sugar
1/2 cup flour
1/2 cup butter, melted

Mix first 5 dough ingredients; mixture will be crumbly. Beat egg with the 2 tablespoons milk; add to crumbs. Pat mixture in bottom of round pizza pan.

Put 3 cups of sliced rhubarb on dough; sprinkle dry Jello over rhubarb.

Mix the sugar, flour and melted butter together until crumbly; sprinkle over dough.

Bake at 350 degrees F for 45 minutes.

RHUBARB PIZZA

FOR THE CRUST:
1 cup flour
1 egg
2 tbsp. shortening
2 tbsp. milk
1 tbsp. baking powder

FOR THE TOPPING:
3 cups diced rhubarb
1 cup sugar
1/2 cup flour
1/3 cup butter, melted
1 (3 oz.) pkg. strawberry gelatin

FOR THE CRUST:
Combine 1 cup flour, egg, shortening, milk and baking powder as for pie crust. Press into round pizza pan.

FOR A CRUNCHY TOPPING:
Place rhubarb on crust; mix remaining ingredients together and sprinkle over rhubarb.

FOR A CREAMIER TOPPING:
Mix rhubarb with other ingredients and pour over crust.

Bake at 350 degrees F 45 minutes.

RHUBARB PIZZA (with oat topping)

FOR THE CRUST:
1 cup flour
5 tbsp. milk
2 tbsp. butter, softened
1 tsp. baking powder

FOR THE RHUBARB:
3 cups chopped rhubarb
1 egg
2 tbsp. milk
1 (3 oz.) pkg. strawberry Jello

FOR THE TOPPING:
1 cup sugar
1/2 cup flour
1/3 cup uncooked oatmeal
1/3 cup melted butter, melted

Mix together flour, 5 tablespoons milk, 2 tablespoons butter and baking powder; spread on pizza pan.

Mix together rhubarb, egg, 2 tablespoons milk; spread on dough. Sprinkle (dry) Jello over rhubarb.

Mix sugar, 1/2 cup flour, oats and 1/3 cup melted butter; sprinkle on top.

Bake at 350 degrees F for 40 to 45 minutes.
