Recipe: Rice and Corn Casserole, Chicken and Rice Pilaf - More thoughts for Lori

Main Dishes - Assorted
I am thinking about making your main dish in the shape of a crab or a squid. The main body could be made rounded of meatloaf like Jen suggested, or a rice recipe bake rounded.

If using the squid idea, I would make the tentacles using curlie fries. You could make squid eyes from olives, or carved peppers, etc.

If making a crab, you could bake chicken strips for the crab legs.

You could make "seaweed" by arranging chopped lettuce around your critter.

Here are a couple of rice recipe ideas.

Rice and Corn Casserole

1 package Chicken Rice-A-Roni (5.9oz)
2 cans Mexicorn (11oz each)
1 jar jalapeno Cheese Whiz -- heated (16.5oz)
1 can cream of chicken soup (10-3/4oz)

Cook Rice-A-Roni according to directions on package. Mix all
ingredients together. Bake 350 degrees for 30 minutes. You can use
whole kernel corn and add pimientos or red bell pepper.

CHICKEN AND RICE PILAF

4 boneless, skinless chicken breasts
Salt, pepper, and paprika
1 1/4 cups chicken broth
1 cup regular uncooked rice
1/2 pkg. dry onion soup mix
1 10 3/4 oz. can condensed cream of mushroom soup
2 T. diced red bell pepper

Sprinkle chicken breasts with salt, pepper, and paprika. Mix chicken broth, uncooked rice, onion soup mix, cream soup, and red bell pepper together; put in an 11x7x1 1/2" baking dish that has been coated with PAM. Place chicken breasts on tp of rice mixture. Cover dish with foil and freeze.

To prepare for serving, thaw chicken dish and preheat oven to 375 degrees. Bake, uncovered, for 1 1/4 hours or until chicken and rice are tender. Makes 4 servings.

This dish can be doubled easily. Bake one and freeze one. You'll have supper one night already finished. Serve with marinated vegetables and rolls.
