JASMINE RICE ALMONDINE
"The fragrant qualities of Jasmine rice are enhanced with orange peel and toasted almonds. Enjoy this dish as an accompaniment for many meals."
1 1/2 cup vegetable stock (or water)
1 cup uncooked jasmine rice, rinsed and drained
1/2 cup fresh orange juice
1/2 cup slivered almonds, toasted
2 tbsp chopped fresh parsley
1 tsp grated orange peel
salt (to taste)
In a 3-quart saucepan, combine stock or water, rice and juice. Bring to a boil over high heat. Cover. Reduce heat to low. Simmer for 15 to 20 minutes, or until rice is tender and liquid is absorbed.
Remove from heat. Let stand, covered, for 5 minutes.
Stir in remaining ingredients. Serve immediately.
Makes 6 servings
