Ritz Carlton Bruschetta

Serving Size : 8
2 heads garlic -- peeled
1 tablespoon olive oil
8 slices crusty Italian bread -- toasted
4 roasted red peppers -- canned or fresh
3/4 pound brie -- in 1/4" slices
Toss garlic with olive oil in an ovenproof pan; cover with foil. Bake at 400F until soft, about 20 minutes. Remove foil and bake 5 minutes longer. Remove from oven.
Mash garlic with a fork until spreadable. Spread garlic onto each piece of bread. Slice peppers and divide into eight equal parts and place on garlic toast.
Top each bruschetta with Brie and place on a cookie sheet. Bake 5 minutes or until cheese melts. Serve immediately.
