Recipe: Kidney Bean Salad

Kidney Bean Salad

2 cans kidney beans, drained
1/2 tsp. minced garlic
1/4 cup chopped parsley
1/4 cup chopped basil
1/4 cup chopped red pepper
1/4 cup thinly sliced green onion
1/2 cup extra virgin olive oil
1/4 cup red wine vinegar (or to taste)
salt and pepper to taste

Combine all ingredients except oil, vinegar, salt and pepper. Mix well. Wisk together oil, vinegar, salt and pepper and pour over bean mixture. Toss gently. Best if left to marinate in fridge for about 2 hours. Mix again before serving.
