Recipe: Baby Carrots with Tarragon

Baby Carrots with Tarragon

Serving Size : 4

2 tablespoons Butter or margarine
16 ounces Pkg mini carrots -- peel
1/4 cup White wine
2 tablespoons Lemon juice
1 tablespoon Sugar
3/4 teaspoon Salt
1/4 teaspoon Pepper
2 tablespoons Fresh tarragon -- mince
1 teaspoon Lemon zest -- grate

In pot melt butter over low heat. Add carrots, wine and lemon juice. Increase heat to high. Cover; cook until carrots are just tender, 10-12 minutes.

Add sugar, salt and pepper. Cook, uncovered, stirring frequently, until carrots are lightly caramelized, 6-8 minutes.

Remove from heat; stir in tarragon and zest.
