Salmon Croquettes

Here is my mother's recipe for Salmon Croquettes.
2 cups canned, flaked salmon (with liquid)
2 tsp. minced onion (may use more, if desired)
2 tsp. minced parsley (may use more)
1/2 tsp. salt
1/8 tsp. pepper
1 cup bread crumbs (may use part wheat germ, if desired)
1 egg, beaten
Mix all together well. Shape into patties of desired size & shape.
Roll in cornmeal to cover.
Brown in small amount of oil, (or cooking spray) in skillet.
