Mom's Buttermilk Rolls for Bread Machine
rec.food.recipes/Caroyn Ranker/2002
3 Tbsp. oil
1/2 cup warm water
1/2 cup buttermilk, at room temperature
1 egg, slightly beaten
2 Tbsp. sugar or honey
1/4 cup instant potato flakes
1 tsp. salt
3 1/4 cup bread flour
1 1/2 to 2 tsp. instant bread machine yeast (I use Saf)
Put all ingredients in bread machine according to directions. Push dough cycle. When dough cycle is complete, place dough on lightly floured surface. Let rest ten minutes. Dough will appear not to have risen very much. Don't worry, oven spring is great!
Shape into desired roll shapes. Allow to rise about 1 hour.
Bake at 375 to 400 degrees for 12 to 15 minutes or until done. Oh, I Sprayed dough balls with butter-flavor Pam before baking. I then put butter on them after they come out of the oven.
