Jennifer's Favorite Peanut Butter Cookies (Mom's Recipe!)
rec.food.recipes/Jennifer MacKinnon/1996
Makes about 4 1/2 dozen
This is a nice crunchy cookie, which I personally always make with KRAFT Crunchy Peanut Butter (the bears hooked me as a kid - what can I say). I also usually cut down on the salt. And.. I'm lazy, I don't usually bother sifting dry ingredients.
1 cup shortening
1 cup white sugar
1 cup brown sugar
2 eggs well beaten
3 cups flour
1 1/2 tsp soda
1/2 - 1 tsp salt
1 tsp vanilla
1 cup peanut butter
Cream shortening and sugar. Add eggs, vanilla, peanut butter. Sift dry ingredients and add. Mix well. Bake at 350 F.
