Naomi's Mom's Peach Pie
rec.food.cooking/Naomi Lacy/1995
Here is my mom's recipe.
6 cups sliced peaches
1 1/3 cups sugar
3 tablespoons cornstarch
1/2 teaspoon cinnamon
1/4 teaspoon nutmeg
1 uncooked pie shell
topping made with:
1 cup flour
1/2 cup cane brown sugar
1/4 cup softened butter
Mix together sugar and peaches. Let sit until peach juice has accumulated.
In saucepan, add peach juice to cornstarch and spices. Bring mixture to a boil and boil 1 minute. Add mixture to peaches, mixing well. Pour into unbaked pie shell.
Mix topping ingredients till crumbly. Cover pie with topping all the way to the edges.
Bake at 425 degrees for 10 minutes. Lower heat to 375 degrees and bake for 40 to 50 minutes. Pie is done when the topping is brown. May need to cover the crust to prevent it from burning.
