BUSYBEE'S MOM'S PEANUT BRITTLE
Here is my mom's recipe for Peanut Brittle:
4 cups sugar
2 cups light Karo corn syrup
1 cup water
1 qt. of unsalted raw peanuts
1/2 stick (1/4 cup) butter
4 tsp. baking soda
2 tsp. salt
Cook sugar, Karo and 1 cup water. Boil to 240 degrees (using a candy thermometer).
Add 1 quart of peanuts, then cook to 320 degrees F.
Remove from heat. Add butter, baking soda and salt; stir vigorously.
Pour in a buttered pan, spreading mixture to a thin layer. Allow to cool, then break into small pieces.
