Yes, I am indeed from Minnesota! We had snow on April 1st too!!! I guess we are still paying for the mild winter!
When I make my salsa, I usually use 2 medium tomatoes, a thick slice of onion, 2-3 garlic cloves and 2 hot peppers. If you want less heat, seed and devein the peppers first. I also add maybe 1/4 to 1/2 tsp of Mexican oregano as well. If you want a deeper red color, add maybe 1/4 cup of no-salt tomato sauce.
I agree...salsa seems so simple, yet sometimes it is difficult to get the right consistency. I have trouble with that from time to time. I think it might depend upon how juicy the tomatoes are and how much blending you do.
