HUSH PUPPIES
Vegetable oil (for frying)
3/4 cup yellow cornmeal
1/2 cup Potato Buds mashed potatoes (dry)
1/4 cup all purpose flour
2 tbsp. instant minced onions
1 1/2 tsp. baking powder
1 tsp. salt
1 tsp. sugar
1 egg, slightly beaten
2/3 cup milk
Heat vegetable oil (3-4 inches) in deep-fat fryer or kettle to 375 degrees F.
Mix cornmeal, (dry) potatoes, flour, onion, baking powder, salt, and sugar; set aside.
Mix egg and milk; stir into cornmeal mixture.
Drop mixture by rounded teaspoonfuls onto hot oil. Fry until golden brown, 3-5 minutes.
Makes 24 hush puppies
