Recipe: Saucy Sausage Supper - Michelle (WI)

Hi Michelle! I saw this in a Women's Circle Cookbook and I thought it looked interesting. I have not tried it yet.

Saucy Sausage Supper

2 cups applesauce
1 (16) can sauerkraut, drained & chopped
1/3 cup water
2 tbls. brown sugar, packed
1/2 tsp. salt
4 small onions, quartered
4 small potatoes, peeled and quartered
1 (12 oz.) Polish sausage, cut diagonally to desired lengths
snipped parsley

In a 3 quart saucepan, combine applesauce, sauerkraut, water brown sugar & salt; add onions and potatoes. Cover and simmer 20 minutes, stirring occasionally. Add sausage; simmer, covered about 20 minutes longer, stirring occasionally. To serve, spoon sauerkraut mixture onto platter & top with sausage & snipped parsley.
