Recipe(tried): Kielbasa Skillet Fry

My husband taught me to make this years ago when we were first married (he could only cook a few things, but he did them well). I love it and it is so easy when you are in a hurry.

5-6 red potatoes, peeled and sliced
1 large onion, peeled and cut into 1/4 inch slices, separate into rings
1 green bell pepper, stem and seeds removed, and cut into 1/4 inch slices
1 1 pound package kielbasa, sliced into 1/4 inch chunks
salt and pepper to taste
Vegetable oil for frying

Heat vegetable oil in large skillet over medium to medium-high heat (same as you would for frying potatoes). Put onion rings on top of potatoes. Salt and pepper if you desire. Cover and dry, stirring them occasionally to keep them from burning (I like some of the potatoes to get a little brown and crunchy).
Ten to fifteen minutes before the potatoes and onions are done, stir in the sliced kielbasa and sliced green peppers (peppers are sliced lengthwise into strips). Stir again halfway through remaining cooking time. Serve with a salad.
