Recipe: Scalloped Corn Ring

SCALLOPED CORN RING

1 cup soft bread crumbs
2 tbsp. butter
1 can condensed cream of mushroom soup
1 (16 oz) can whole kernel corn, drained
2 eggs, slightly beaten
1/4 cup chopped onion
1/4 tsp. salt
1/4 tsp. pepper
1/2 tsp. celery salt
Pimento, chopped or cut in strips (optional)
1/2 green pepper, chopped (optional)

Preheat oven to 350 degrees F. Grease a ring mold or Bundt pan.

Brown bread crumbs in butter.

Stir in soup, corn, eggs, and seasonings. Pour into prepared pan. (Pimento and/or green pepper may be placed in bottom of mold first.)

Bake 40 minutes at 350 degrees or until firm.

Unmold on plate.

Servings: 6-8

Hi Gayle,

I haven't tried this recipe but it looks more like a corn pudding than a batter. Did the recipe you're looking for use cornmeal or corn muffin mix?
