Recipe(tried): Scalloped Corn (with homemade cream sauce with cracker topping)

I made this for a double-birthday party two weeks ago, and it turned out great.

SCALLOPED CORN

1/4 cup chopped onion
1/2 small green bell pepper, chopped (I don't use)
2 Tbsp butter
2 Tbsp flour
1 tsp salt
1/2 tsp paprika
1/4 tsp dry mustard
Dash pepper
3/4 cup cream
1 (10 oz) pkg frozen corn, cooked and drained (can substitute one 16 oz can whoel kernel corn, drained)
1 egg, slightly beaten
TOPPING (optional):
1/3 cup cracker crumbs (Ritz are good)
1 Tbsp butter, melted

Cook and stir onion and green pepper in 2 tablespoons butter until tender; remove from heat.

Stir in flour, salt, paprika, mustard and pepper. Cook over low heat, stirring constantly, until bubbly; remove from heat.

Stir in cream gradually. Heat to boiling, stirring constantly. Boil and stir 1 minute. Stir in corn and egg. Pour into ungreased 1 quart casserole.

If using the topping, mix crumbs and butter, and sprinkle over corn.

Bake, uncovered, 350 degrees, 30-35 minutes.

VARIATION:
For cheese scalloped corn, fold 1/2 cup shredded cheese, mozzarella or cheddar, into the sauce mixture.
