Recipe: Seafoam Candy (2 easy recipes, using brown sugar)

SEAFOAM CANDY

3 cups light brown sugar
1/4 tsp. salt
3/4 cup water
2 egg whites
1 tsp. vanilla extract

Dissolve sugar and salt in water. Cook without stirring to 225 degrees F or to the hard boil stage. (You candy will not harden unless you follow these instructions completely.)

Remove from heat and pour gradually over stiffly beaten egg whites. Beating constantly until peaks hold. Add vanilla. Continue beating until candy holds shape. Then drop by spoonfuls on waxed paper. (You can add vanilla at any time while beating.)


SEAFOAM CANDY

2 cups brown sugar
1/2 cup water
1 egg white, well beaten

In saucepan combine sugar and water. Cook until it spins a thread (very important - DO NOT STIR).

Beat egg white and slowly add sugar mixture. Drop from spoon on greased paper. When the candy is soft solid, place nut on top if desired.
