NINE-TO-FIVE MEAT LOAF
1 pound ground beef round
1 (6 ounce) can tomato sauce
1/2 onion, finely chopped
1 tablespoon Dijon-style mustard
1/2 teaspoon ground pepper
1/4 teaspoon salt
Mix all ingredients; shape into small, narrow loaf. Place in metal baking pan; cover. Refrigerate at least 8 hours, no longer than 24 hours.
Heat oven to 425 degrees F.
Bake meat loaf on lowest shelf in oven for 20 minutes. Remove from oven and place under broiler. Broil 5 minutes. Remove from broiler. Let stand 5 minutes before cutting.
Makes 4 servings
