Recipe(tried): Seafood Cocktail / Top Food's Ceviche

Salads - Main Dish
This is our favorite Friday meal when hot weather comes. Great with corn chips or tostadas and a beer. Our local Top Foods asks almost 5$/lbs for this.

Seafood Cocktail

3 Roma tomatoes, diced
4 to 5 Scallions, sliced
1 Cucumber, peeled and diced
2 to 3 Jalapenos, seeded and finely diced
6 Radishes, diced
1 to 2 stalks of Celery, diced
1/2 bunch cilantro, finely chopped
2 Limes, Persian, juiced
1 Lbs imitation crab meat, coarsley chopped
1 Lbs bay/salad shrimp, cooked
2 Cups Clamato or Generic
3 to 4 Cups V-8 or other Vegetable Juice
Salt to taste, Adjust chilis, lime, juices to taste.
