Seppo here is my Ratatouille rec.I use for stuffing squashs(butternut being one
of our favourites)or you can use it as a pasta sauce or serve it over
rice......here we go
RATATOULLE
************
1 stick celery ,chopped
3 aubergines(eggplant),sliced
1/2 lb mushrooms
4-5 tomatoes(italian roma have a great flavour if you can get them)
1 Tbls fresh origanum
vegtable or herbal salt to taste
freshly ground black pepperLayer veggies in a casserole dish,add seasoning and bake at 200c(400f)for 30-40
mins til tender.You could add a little cold-pressed olive oil if you like
before serving
Hope you like it.
It also goes well as a baked potatoe filling,for children I also sprinkle some
cheese over it prior to serving
