Recipe: Shrimp al Limone for M. Torres

SHRIMP AL LIMONE

3 tbsp. olive oil
lb. shrimp, peeled & cleaned
2 cloves garlic, minced
1/4 c. chopped Italian parsley
1/4 tsp. dried mint
1/4 tsp. salt
1/2 tsp. freshly ground black- pepper
Juice of 1 lemon

In a skillet, heat the oil and toss the shrimp over high heat until they begin to firm up. Add the garlic, parsley, mint, salt and pepper and cook for 3 minutes. Squeeze the lemon juice into the pan through a strainer or cheesecloth. When they are warm through, the shrimp are ready to serve. Makes 4 servings.
