Recipe: Vegetable and Alaska Surimi Seafood Stir-Fry (using imitation crab)

2 tablespoons vegetable oil
1 clove garlic, minced
1/2 red bell pepper, sliced in 1/4 strips
1/2 yellow bell pepper, sliced in 1/4" strips
1 cup Chinese pea pods
1 cup brown mushrooms, sliced
2 cups Alaska surimi seafood (imitation crab)
1/2 cup green onions, sliced
Salt and pepper (to taste)
2 tablespoons sesame seeds, toasted (for garnish)
Hot cooked rice (for serving)
Place oil in skillet or wok and heat until very hot. Add garlic and stir-fry for 30 seconds.
Add red and yellow pepper strips, pea pods and mushrooms. Stir-fry for 1 minute, then add 2 tablespoons water, cover and cook 2 minutes longer, stirring frequently until vegetables are crisp-tender.
Add Alaska surimi and green onions. Stir-fry 1 minute longer. Season to taste with salt and pepper.
Sprinkle with sesame seeds and serve on hot cooked rice.
