Shrimp Scampi
Serving Size : 4

3/4 cup butter
2 tablespoons minced green onion
2 tablespoons olive oil
10 cloves garlic -- minced
1 1/3 tablespoons lemon juice
1/2 teaspoon salt
1 1/2 pounds shrimp, shelled & deveined
1/2 teaspoon lemon peel

Melt butter in a wide frying pan over medium heat. Stir in onion, oil, garlic, lemon juice, and salt; cook until bubbly. Add shrimp to pan and cook, stirring
occasionally, until shrimp is pink (about 5 minutes). Stir in lemon peel and parsley; turn into serving dish.

When I make this scampi recipe myself, I usually mix a little butter and bread crumbs and put on top and place under the broiler for a few seconds to brown. It's really good served with rice!
