Ann,MS (10:16:20 AM) :

This is very much like that served at Manales in New Orleans.

Billy's Barbecued Shrimp

To prepare, mix together in a large pot:
(Amounts are approximate--I never measure.)
1/2 c. olive oil
1/2 stick butter
1 T. salt
juice of 2 lemons (throw in the lemons, too)
several dashes Tabasco
1/4 c. Worcestershire
coarsely-ground black pepper--when you think you have enough, add some more

Heat to a low boil. Add 2 lbs. JUMBO shrimp (3 lbs. heads on is even better). Simmer 15-20 minutes until shrimp turns pink--DO NOT OVERCOOK!

Serve with bibs on guests and newspaper on table. It's really messy.

Complete the meal with fresh French bread to dip in the juice and a tossed salad.

Note: Manales does a barbecued shrimp sandwich for lunch. I think they use cook leftover shrimp. It's peeled and stuffed in a small loaf of French bread. Sauce is poured over the shrimp and extra comes on the side.

The original recipe calls for baking this, but we think shrimp peel better done on the stove.
