Shrimp Stuffed with Crabmeat

For 2 because I think of this as a romantic dinner.
Get 2 or 3 very large shrimp per person (the size where 5 to 10 = pound)
You need a three finger pinch of crabmeat per shrimp, a small package of softened cream cheese, some finely chopped parsley and scallion greens, and a splash of good quality sherry. and 1/2 c. of fine bread crumbs.
Peel and butterfly the shrimp. Combine the stuffing ingredients, saving back 1/4 c. of breadcrumbs, and stuff the butterflied shrimp, patting back into shape. Put them in a buttered gratin dish just large enough to hold them in one layer. Lightly brush the shrimp with melted butter and sprinkle with the remaining breadcrumbs. Bake in a 450 oven for 10-12 minutes, till the shrimp are cooked through, stuffing is runny, and the crumbs browned.
