MISSISSIPPI HUSH PUPPIES

Crisco Oil for deep frying
3/4 cup yellow cornmeal
1/3 cup all-purpose flour
1 1/2 teaspoons baking powder
1/2 teaspoon salt
1/2 cup buttermilk
1 egg
1/4 cup finely chopped onion
Heat 2 or 3 inches Crisco Oil to 365 degrees F in deep fryer or deep saucepan.
Combine cornmeal, flour, baking powder and salt in medium bowl.
Add buttermilk, egg and onion. Mix until well blended.
Drop batter by tablespoonfuls into oil heated to 365 degrees F. Fry a few at a time for 3 or 4 minutes or until golden brown. Turn as needed for even browning. Drain on paper towels. Serve immediately
TIP:
While measuring out ingredients for recipe, measure enough dry ingredients for several recipes. Combine ingredients in zip-lock plastic bags and store. Next time you want to make hush puppies all that will need to be added is buttermilk, egg and onions.
