Smoked salmon salad
Pretty and good for a starter
Lettuce (not iceberg, but the leafy kind)
Lemon
Lime
Cucumber
Cherry tomatoes
Dressing/filling
1 cup of sour cream (or plain yogurt)
lots of chopped fresh dill
1 Tbsp of grated horseradish
1 Tbsp sugar
1 Tbsp of lemon juice
On a big glass plate arrange lots of lettuce leaves in center – preferably whole small leaves, but you can also use bigger if torn into smaller pieces. Arrange slices of lemon and lime alternated around the leaves, fans of cucumbers and halved cherry tomatoes outside lemon/lime slices. Take two slices of smoked salmon for each person, wind them loosely around your fingertip so they resemble roses. Place on lettuce leaves. Fill centers of roses with dressing.
Dressing: Let sour cream or yogurt drip through a coffee filter for a few hours so it becomes thick. Stir in the remaining ingredients. Taste. You may want it sweeter, stronger, tarter...... Fill in center of salmon roses.
Serve with toast.
Great as a starter or a first course. Or just as a salad with white wine. Or on the lunch table.
You could also use slices of gravlax. In that case I would add a teaspoon or two of prepared mustard to dressing.
