Recipe: Smooth Tapioca Pudding

Hi Eric, Here is my recipe for tapioca pudding.

Smooth Tapioca Pudding

1/2 cup minuet tapioca
1-1/3 cup sugar
3 Tbls cornstarch
1 tsp. salt
4 eggs
1 Tbls. vanilla
2 qt. milk

place dry ingredients in saucepan stir to mix place on medium heat and cook untill thick. remove from heat to allow pudding to cool slightly. In the short time it takes to beat the eggs the pudding will have cooled just enough to take the eggs without curding the pudding. Beat eggs in seperate bowl add to pudding then add vanilla. If you don't like the idea of not cooking the eggs along with the other ingredients cook everything except the vanilla in the top of a doubler boiler, cook untill thick then add vanilla.
