Mom's Cucumber Relish
This is the best relish I've ever tasted. Serve it with hamburgers, sandwiches, cold meats or chops.
4 cups coarsely shredded peeled cucumbers (about 3-1/2 cucumbers)
2 cups chopped onions
1 sweet red pepper, chopped
half bunch celery, chopped
2 1/2 cups packed brown sugar
1 1/2 tsp salt
2 1/3 cups white vinegar
6 tbsp all-purpose flour
1/2 tsp ground turmeric
1/2 tsp dry mustard
Method: In a large heavy saucepan, combine cucumbers, onions, red pepper, celery, sugar, salt and 1-1/2 cups of vinegar.
Bring to boil over medium-high heat and boil for 15 minutes.
Meanwhile, in a small bowl, blend together flour, turmeric, mustard and remaining vinegar until smooth; whisk into cucumber mixture.
Boil for 15 minutes (reduce heat but maintain a boil), stirring and skimming off any foam. Be careful mixture doesn't burn. Ladle into sterilized jars, leaving 5 mm/1/4 inch headroom. Immediately cover with sterilized lids and seal tightly. Process in boiling water bath. Yield: 8 1/2 pint jars.
