Recipe: Sour Cream Pound Cake

hi sharon!
i'm going to savannah this afternoon and will try to stop by the candy kitchen to ask for confirmation but i'm pretty sure that they get the crust by using all shortening and no butter in those pound cakes.
when you turn your cake out of the pan, be sure to put it on a cooling rack and not on a plate, or it will get moist & wreck your crusty top.
here are some recipes to get you started.
SOUR CREAM POUND CAKE
1 c. vegetable shortening
3 c. sugar
6 egg yolks
3 c. flour
1/4 tsp. soda
1/2 tsp. salt
1 c. sour cream
6 beaten egg whites
1 tsp. vanilla or more if desired
Cream shortening and sugar. Add egg yolks one at a time, creaming well. Sift together dry ingredients. Add to shortening sugar mixture. Add sour cream. Fold in beaten egg whites. Add vanilla. Bake 1 1/2 hours at 325 degrees in a greased tube pan.
SOUR CREAM POUND CAKE
1 c. shortening
3 c. sugar (white)
3 c. flour
1/4 tsp. soda
1/2 tsp. salt
6 eggs
2 tsp. vanilla
1 c. sour cream (or 1/2 pt.)
Cream butter well. Add sugar. Beat well. Add eggs, one at a time, beating after each addition. Sift flour, salt and soda together. Add to creamed mixture, alternating flour and sour cream. Start and end with flour. Bake in greased tube pan at 325 degrees for 1 1/2 hours or until done.
SOUR CREAM POUND CAKE
1 c. Crisco shortening
3 c. sugar
6 eggs
1/4 tsp. soda
3 c. cake flour
1/2 tsp. salt
1 c. sour cream
1/2 tsp. lemon extract
1 tsp. vanilla extract
Separate egg whites and beat lightly. Set aside. Cream sugar and shortening. Beat egg yolks and add to mixture. Sift flour, soda and salt. Add sour cream and flour alternately with other mixture. Add flavorings. Fold in egg whites. Bake in greased tube pan 1 1/2 hours at 325 degrees.
SOUR CREAM-ORANGE PECAN POUND CAKE
1 c. shortening
3 c. sugar
6 eggs
3 c. flour
1/4 tsp. baking soda
1/2 tsp. salt
8 oz. sour cream
1 tbsp. plus 1 tsp. orange extract
1 c. chopped pecans
In a large mixing bowl cream shortening and sugar together. Add eggs one at a time. Beat well after each egg. In a small bowl combine flour, soda and salt. Alternate adding flour mix and sour cream (begin and end with flour). Stir in orange extract and pecans. Pour into a greased and floured 10 inch tube pan. Bake at 325 degrees for 1 hour and 30 minutes or until toothpick inserted comes out clean. Cool 10-15 minutes then remove from pan and cool completely on rack.
