Recipe(tried): Cheddar Popovers (lowfat, using egg whites)

LOWFAT CHEDDAR POPOVERS

3 egg whites
1/2 cup fatfree milk
1 tablespoon reduced calorie margarine, melted
1/3 cup bread flour
2 tablespoons whole-grain wheat flour
1/8 teaspoon salt
Vegetable cooking spray
2 tablespoons shredded reduced fat sharp cheddar cheese

Preheat oven to 450 degrees F. Coat 6 muffin pan cups with cooking spray.

Beat egg whites at high speed until foamy.

Add milk and margarine; beat at medium speed until well blended.

Gradually add bread flour, whole wheat flour and salt, beating until mixture is smooth.

Heat the prepared (empty) pan at 450 degrees for 2-3 minutes or until hot. Remove hot pan from oven and reduce oven temperature to 375 degrees F.

Pour 1 tablespoon batter into each cup; sprinkle each with 1 teaspoon cheese. Fill cups three-fourths full with remaining batter. Bake at 375 degrees F for 45 minutes. Cut a small slit in top of each popover and bake an additional 5 minutes. Serve immediately.

Makes 6 popovers
