PEACHY BRAN COFFEE CAKE
"Before baking, batter barely covers bottom of pan; during baking it rises just enough to make a delicious coffee cake."
1 (1 lb. can (2 cups) sliced peaches
1 cup Kellogg's All-Bran or Bran Buds cereal
1 egg
1/4 cup soft shortening
1 cup sifted regular all-purpose flour
2 1/2 teaspoons baking powder
1/2 teaspoon salt
3/4 teaspoon ground cinnamon, divided use
1/4 cup sugar (for sprinkling on top)
Drain peaches, reserving syrup. Measure All Bran and 2/3 cup peach syrup into mixing bowl; let stand until moisture is absorbed. Add egg and shortening; beat well.
Sift together flour, baking powder, salt and 1/2 teaspoon of the cinnamon. Add to All Bran mixture; stir only until combined. Spread in well-greased 9x9x2-inch baking pan.
With floured spoon make grooves in batter diagonally across pan about 1 1/2 inches apart, forming a lattice. Place drained peaches in grooves. Sprinkle with sugar and remaining 1/4 teaspoon cinnamon.
Bake in moderately hot oven (400 degrees F) about 30 minutes or until done.
Makes 9 servings
