Red Velvet Cake
2 cups sugar
1 3/4 cups vegetable oil
2 eggs
2 1/2 cups cake flour
2 tsp. baking soda
1 tsp. salt
1 tsp. cocoa
2 oz. red food coloring
1 tsp. vinegar
1 tsp. vanilla
1 cup buttermilk
In a large deep bowl, cream sugar and oil with mixer until blended.
Add eggs and blend until creamy, set aside.
In another medium bowl sift flour, baking soda, salt, and cocoa, set aside.
In a small bowl, mix food coloring with vinegar. Add food coloring to egg and sugar mixture and mix by hand until blended then add vanilla.
Add portions of flour mixture and buttermilk to egg and sugar mixture until all blended together with mixer. Pour mixture into greased and floured pan.
Bake in preheated oven at 350 degrees. Bake for 30-40 minutes.
Creamy Frosting:
5 Tbsp. flour
1 cup milk
1 cup unsalted butter
1 tsp. vanilla
1 cup sugar
In small pot whisk flour and milk until blended. Cook over medium heat until thickens to paste. Set aside until cool. Remove thin film from top of flour mixture.
Place flour mixture in deep medium bowl, add soften butter and sugar, mix on medium speed until fluffy with no course texture from sugar.
Add vanilla. Spread on cake and adding sprinkles is optional. The cake is excellent.
