SPICY MANDARIN ORANGE CHICKEN
4 sheets (12x18-inches each) Reynolds Wrap Everyday Heavy Duty Aluminum Foil
1 (12 oz.) jar orange marmalade
1/4 cup spicy Szechuan sauce
2 cups cooked rice
4 boneless, skinless chicken breast halves (1 to 1 1/4 lb.)
1 (15 oz.) can mandarin oranges, drained
1/2 pound Shiitake mushrooms, stems removed, sliced
1/2 pound sugar snap peas
1/2 cup coarsely chopped cashews
1/4 cup sliced green onions
Preheat oven to 450 degrees F or grill to medium-high.
Combine marmalade and Szechuan sauce. Mix half of sauce mixture with rice; reserve remaining sauce mixture.
Center one-fourth of rice mixture on each sheet of Reynolds Wrap Everyday Heavy Duty Aluminum Foil. Top with chicken breast halves, orange segments, mushrooms and peas. Drizzle with remaining sauce mixture.
Bring up foil sides. Double fold top and ends to seal packet, leaving room for heat circulation inside. Repeat to make four packets.
Bake 18 to 22 minutes on a cookie sheet in oven or grill 14 to 16 minutes in covered grill. Sprinkle with cashews and green onions before serving.
